These baked broccoli patties with cheese are an awesome, healthy and delicious dinner side dish. Another great way to get kids to eat their veggies (and adults too!). Broccoli is a great source of Vitamin C and these have both a dairy and vegetable source of calcium. These can also be made in bulk, then frozen for future meals. Simple defrost in the fridge and re-heat and crisp them up again in the oven.

Ingredients

  • 4 cups broccoli
  • 1⁄2 onion finely chopped
  • 2 cloves garlic minced
  • 3⁄4 cup Panko crumbs
  • 2 eggs lightly beaten
  • 1⁄2 cup Cheddar cheese grated
  • 1⁄3 cup Parmesan cheese finely grated
  • 1 1⁄2 tablespoon oil
  • salt to taste
  • black pepper to taste

Directions

  1. Finely chop onion and mince garlic. In a small skillet, heat oil and saute onion and garlic until soft (about 7 minutes). Set aside to cool.
  2. If you use defrosted broccoli, remove excess moisture with paper towels (for fresh broccoli, blanch it for 2 minutes). Chop into bite size pieces. Transfer to a large bowl.
  3. Add Panko, lightly beaten eggs, Parmesan cheese, Cheddar cheese, onion and garlic to the bowl. Season with salt and pepper to taste; mix until combined.
  4. Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and spray with oil.
  5. Form the mixture into patties and place on the prepared baking sheet.
  6. Bake in the preheated oven for 15 minutes.
  7. Flip and bake for another 10 minutes.
